Custom tags
In addition to existing tags: Project users, statuses of tasks (completed/in progress) etc. would great to be able to define custom tag categories and custom tags within the categories so we can tag tasks with anything we set up for ourselves. For example: have category Type with tags: Idea, Confirmed feature, Rejected feature or category Version with tags 1.0, 1.1 etc.

Just an example, I am sure others would have many other uses for this, understand there would need to be some limit, but at least 5 new fields would be great."

Tags is a big one for me. I would use it for GTD-like contexts, so that I would label tasks based on where and when I could work on them.
I would want cross-project tags for that. Filter all email tasks across all projects, or all telephone calls or all errands for example. Or one label for gathering all "midget" tasks that take less time and effort.
Bonus for being able to hide labels from clients/guests so that some are internal only.
Ability to filter by tags i crucial. It's a main blocker why Redbooth won't work for me.

This way I could set a filter on a tag, to see all todos across all projects that have the 'decision required' tag (or whatever tag someone chooses)

Have you checked new Project Templates module - https://freedcamp.com/marketplace/22 allowing to use any existing project to create a new one?
As for tags Project Templates will allow to bring tags across when duplicating when we will actually add Custom Tags.
May I ask what type of tags you will create and what else you will expect - probably search by tag, filter tasks by one or more tags?
Do you want to see tags in Task list?
Shall we add a few different types of views in Task list - brief, standard and full each showing more info about a task? In this case 'Brief' will only show task name, due date if set, priority and who is assigned. 'Standard' can show tags. 'Full' can expand to show what Milestone that task belongs, how many comments and files and when was last comment. When integration with Time will be completed it can show how many hours was worked and % completion if expected hours were entered?

Multiple 'tags' or 'labels' to the same todo would be ideal.
Also - It might be a good idea to have separate labels, tags for every project. When creating a new project, give the user the option to import tags/labels from other projects. This way if we manage 2 or 3 different project types, we can import the tags/labels from the project we last used them in.

I would like to create these on a per-project basis. All of my tasks will go through discussion, pending approval, submitted, implemented.

Different tags might be nice but not absolutely necessary.
And yes ability to apply multiple tags makes sense but even better the ability to segregate the to do's by group under each tag/label

It would be perfect if a tag/label could be configured to be project scoped or account scoped at creation time. But if i had to choose I would say project scoped.

I too was going to comment on either defining a set number of additional status tags (developed from discussions here) or allow users to define their own; including color options.
I have a few todos that are "on hold" for various reasons and while I wouldn't want to sort through 100 different status tags for specifics (that's what comments are for) they are in a "in progress" status which isn't really true. They also aren't "completed" nor are they brand new. Some may turn out to be revisited at which point they really will be "in progress" but I'd like to differentiate those two states ("on hold" versus truly "in progress). Some may be "canceled", but I won't want to delete them permanently either just in case (it happens enough that I don't delete much from my projects lists).

I was going to ask something similar. I would like a "signed off" status - or a status that preceeds "completed".
When team-members mark a task as "completes" it disappears & is hard to find - often "completes" tasks still require a final "quality check" by project manager
