Project prerequisites and next steps
It would be great to be able to list prerequisites and next steps on projects. For example I might say "Waiting on data from John Smith..." or "Waiting for Samantha to complete x..."

It can be done now with the Project Overview application and Custom Fields for Projects:

Ok. I hear you. I would rename your suggestion to 'Add project status and description' with an explanation that it should be an UI for a project manager to change project status and (optionally add a status note).
Problem I see is that many people will want to be able to see projects 'In Planning' compared to 'In Progress' but I am not sure if all people want to maintain current project status by updating a field. I think we have to find a way to extract this status for you automatically.
We have more time now to improve Freedcamp. Ideally you should be able to get a picture of where project is by looking at Gantt chart or reading latest updates from tasks etc.

Or potentially there would be some icon to the left of each project name that could clicked to set the status to something else. Hovering could give a tooltip describing why the status is as it is.

Perhaps the choose project menu which contains todos, discussions, etc. could have a heading like In Progress/ On Hold/ Complete and hovering over that would have a text box with more information on the status.

Do you see it as a simple text field - project description - you can easily access?

I agree with what you are saying but I am talking about the project level rather than the task level. I would like to be able to see what an entire project status is from the choose project drop down. My team works with many simultaneous projects and need to be able to see at a glance what the status is for each one without digging in to tasks.

There are two ways, I think.
1. Just add 'Pending' status for tasks.
2. Do task dependency but in this case you can chart Gantt but you can not stop inside a task. Task A depends on B means you can not start A until B is completed.
3. Do both so you can set task to 'Pending' and add why in comments or we can prompt you for a reason when you set it to 'Pending' and display it nicely in task list removing a need to open it up and scroll to a last comment.
